Orange French Toast


Crisp, not soggy – perfect for a large group since it is all ready at the same time! 


2 cups of fresh orange juice 1 teaspoon of vanilla extract
  2 cups of half and half 1 teaspoon orange extract
6 eggs, beaten 2 1 pound loaves of day old French bread
¼ cup of powdered sugar ½ cup unsalted butter
2 Tablespoons Grand Marnier


Preheat oven to 325 degrees. Mix first 7 ingredients together and pour into a large shallow dish.
Cut French bread (diagonally) into 1 inch slices. Soak bread (2 minutes Max) on each side.
Brown slices in butter over medium-low heat in large skillet.
When all are browned, place on cookie sheets (in a single layer) and bake 20 minutes.
Remove from oven, sift some powdered sugar over slices and serve hot with maple syrup and orange marmalade.






Swiss Quiche

This Swiss version of the much admired quiche makes an ideal brunch dish, accompanied by bacon, a citrus compote and steaming coffee. For lunch or supper, serve the quiche with a tossed green salad. The quiche differs from the famed French quiche Lorraine in that cheese rather than bacon is used. 


Pastry (we use Pilsbury pre made pie crusts) 3 tablespoons of cornstarch
2 tablespoons finely chopped onion 3 table spoons of milk
1 ½ cups of shredded Swiss or Gruyère cheese 3 eggs
1 cup of milk ¾ teaspoon of salt
½ cup of whipping cream 1/8 teaspoon of ground nutmeg
Dash of white pepper

Prepare pastry.
Sprinkle onion and chese in pastry lined baking dish.
Heat oven to 425 degrees.
Pour 1 cup of milk and whipping cream into sauce pan.
Mix cornstarch and 3 tablespoons of milk; stir into milk-cream mixture.
Heat to boiling over medium heat, stirring constantly; boil and stir 1 minute.
Remove from heat and cool slightly.
Beat eggs slightly with hand beater; gradually beat in cream sauce add remaining ingredients.
Pour egg mixture into baking dish.
Cook uncovered in oven for 15 minutes.
Reduce oven temperature to 300 degrees.
Cook uncovered until a knife inserted halfway between center and edge comes out clean (about 30 minutes).
Let stand 10 minutes before cutting.
